The Best Meals Happen At Home

Busy busy busy. That is the story of my life, especially during the week. My mornings start when my alarm clock goes off at 5:00 AM, and my evenings end around midnight when I finally pry my fingers from my keyboard and go to bed. I am constantly saying "there are not enough hours in the day", and when you are a working parent of two little kids, that is so true.

Since I don't get to spend much time with my kids during the week, I'm certainly not going to spend the few hours that I do have in the evenings cooking dinner. We need for our weeknight dinner preparation to be quick and simple. While it would be so easy to just run through a drive through after I pick the kids up from school, I want my family to eat healthier meals that we make at home.

When you visit Best Meals at Home online, you will find FASTastic recipes that can be cooked in 30 minutes or less. Those are my kind of recipes! Since my kids love fast food chicken nuggets, I was happy to find a recipe for chicken nuggets that we can make at home. These nuggets are made from real chicken breast meat, and are baked instead of fried. This will be a healthier option for my kids and I know they will love it!

Crunchy Chicken Nuggets

Prep Time: 15 Minutes
Cook Time: 25 Minutes

Crunchy Chicken Nuggets
Source: Best Meals at Home

Ingredients:
  • 2 cups Cheerios cereal
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup milk
  • 2 Tbsp. honey
  • 1 Tbsp. mustard
  • 1 lb. boneless, skinless chicken breast or thighs, cut into 1-inch pieces
  • 2 Tbsp. butter or margarine, melted
Preparation:
  1. Heat oven to 400°F. Spray with cooking spray or lightly grease 13x9-inch pan.
  2. Finely crush cereal. Stir together cereal, salt and pepper; set aside. In a medium bowl, stir together milk, honey and mustard until blended. Dip chicken into milk mixture; coat with cereal mixture. Place chicken in pan; drizzle with melted butter.
  3. Bake 20 to 25 minutes or until crust is golden and chicken is no longer pink in center.
