Hi everyone! I'm Nichol from KiddiesCorner Deals and thrilled to be over here for Saturday Playdate on LeeAnn's blog! I hope you come by and visit as I post about wonderful deals for babies and kids, recipes, reviews and giveaways.

Since it is the fall and the weather here in NY has definitely been proving that, I want to share a pumpkin recipe with you. Pumpkin is one of my favorite fall flavors and I cook and bake with it a little too much. My family are not as fond of pumpkin like me so I get the treats all to myself...which is good but my hips definitely do not like it. I'm pretty sure this Pumpkin Pie Bar recipe is from Kraft, but I cannot be too sure of that. I wrote it down years ago from a book and make it for family gatherings year after year, it's delish. I hope you enjoy the recipe!

Pumpkin Pie Bars

Pumpkin Pie Bars

Ingredients:

1 1/3 cup all-purpose flour
1/2 cup firmly packed brown sugar
3/4 cup granulated sugar-divided
1 1/2 sticks unsalted butter-cold
1 cup old fashioned oats
1/2 cup chopped pecans
1 8oz package cream cheese-softened
3 large eggs
1 15oz can pumpkin puree
1 tablespoon pumpkin pie spice

Directions:

Heat oven to 350°F. Line a 13x9 baking pan with heavy duty foil with the ends extended over pan. Grease with non-stick cooking spray(I use butter flavored). Mix flour, brown sugar, and 1/4 cup granulated sugar in a bowl. Cut in butter with knives until it resembled course crumbs. Stir in oats and pecans. Reserve 1 cup of the oat mixture. Press the remaining mixture into the bottom of the pan. Bake for 15 minutes. Meanwhile, beat the cream cheese, remaining 1/2 cup sugar, eggs, pumpkin and pumpkin pie spice in a small bowl with electric mixer on medium speed until well blended. Pour over baked crust and sprinkle with the reserved crumb mixture. Bake 25 minutes. Remove from oven and cool completely. Use the excess foil to lift out of the pan and cut into 24 bars. Enjoy!

Everything she makes always looks soooo good and these bars are no exception. Between her recipes and her deals, I'm surprised I haven't ended up 20 pounds heavier and completely broke. :)

LOL Xenia I love you too! I've ended up 20lbs heavier because like I said I have to eat these treats by myself....actually I've been exercising again oh and I'm broke too!
