McFatty Monday - Week 18

I went up another hill on this diet roller coaster this past week. It wasn’t a high hill, but a hill nonetheless. Oh well. I’m certainly not surprised. I ate lunch out way too many times last week.

I need help with something. I need some suggestions for toddler friendly, quick and easy dinner meals. We actually do pretty well with eating decent dinners during the week, but it is the same old stuff every single week and honestly I’m getting sick of it. Rylie’s favorite is our idea of Chicken Parmesan – chicken strips, with the curly pasta noodles and spaghetti sauce. She loves that dinner. But we have it twice a week and it is just getting old. Some other favorites are rotisserie chicken with sweet potatoes, meatloaf with some kind of vegetable, and bean burritos. I would love to hear what you all eat for dinner during the week. Feel free to leave links to recipes if you would like. But again…we need quick and easy since we don’t have much time in the evenings. I appreciate all of your suggestions!!!

I was up a bit this week too so I feel your pain!

As far as dinners, I do as many variations of pasta as I can think of. Spaghetti, mac & cheese, mini ravioli, tortillini...those are all bite sized and go over well. Rice and black beans with cheese seem to go over well, especially if I serve it with a side of chips and salsa. If I'm feeling especially lazy, we have "breakfast" -- Eggo waffles and cereal :)

Cereal. LOL! Working mommas have it tough when it comes to dinner. If it takes too long to prep then it will be bedtime before dinner time. I do the breakfast thing once a week, waffles, pancakes, eggs, the kids love it. Also, if you want my homemade chicken pot pie receipe I would love to share it. I prep it all the night before, then just put in the oven for 45 min. Easy. Pigs in a Blanket (hotdogs rolled in croissants - yum). We grill hotdogs, or burgers one night usually too. And, sometimes, Hubs and I eat steaks or something after kids go to bed, and kids get cereal that night. Not my proudest moment, but they could care less. And, one night we usually eat at Chick Fil A. Stir Fry? That's easy and somewhat healthy....

I loathe cooking (love baking) so I'm probably not much help!

Yikes! I don't have many ideas for you there, it is probably my allergic reaction to cooking LOL.

The boys do not eat with us they just make their own dinner. Ericka eats anything I make so she is easy.

We don't do big dinners, a lot of time it is steak and veggies, or hamburger helper (for Honey and Daddy), dinner is not a huge affair at our house.

However for quick and easy I posted a Lasagna goulash recipe that I doctored that I really like. (If you didn't see it before)

My kiddos are a little older - 7, almost 8, but we tend to have the same things on our meal rotation too. I'm not much of a cook, but I try. We do shake n bake chicken, spaghetti, pasta w/ alfredo sauce, I love the HomeStyle Bake Meals that come in a box, frozen lasagna, stir fry - those are our regulars. So now you know my secret - cooking is not my strong point. :)

Hi - some of our regulars are: Spaghetti with Italian Sausage (extrude the sausage and brown it like you would hamburger for meat sauce), Kielbasa with potatoes and carrots (if you peel and cut up the potatoes the night before, put them int a bowl and cover them with water so they won't turn brown, then you can use the same water to cook with, and then it's all done in 30 minutes), Tacos in a Bag have made it into the rotation (this is one I learned in Girl Scout camping training - browned ground meat prepared with taco seasoning mix, using their directions, put a lunch sized bag of doritos or fritos in each person's bowl {camping, you would serve it in the chips bags}, add the meat, add taco toppings and voila).
